Some food debris noted under display cabinet on floor.
Corrective action: thoroughly clean above mentioned area. Removing food debris will facilitate in preventing pests.

Observation:
Prep cooler storing whipped cream canisters is not closing securely. Seal does not appear to be working at the bottom left corner. Air temperature inside the cooler was still satisfactory at 3.9 deg.C.
Corrective action: replace door seal, ensure the cooler is able to close tightly to prevent cool air from escaping.
- Suggested to anchor the door closed with a heavier item until the seal can be replaced.
- Continue to monitor inside air temperature with a thermometer.

Routine
- Handsinks supplied with hot + cold water, liquid soap and paper towels.
- Dishwasher reached final rinse temp. of 72.2 deg.C at the plate.
- Sanitizer from dispenser and buckets measured 200ppm QUATS. Test strips available on site.
- Ice machine kept in sanitary condition
- Dry storage racks kept organized, all food stored off the floor.
- Sink plugs available at 2 compartment sink.
- Front display (open) cooler: 3 deg.C
- Prep coolers at barista section from left to right: 4 deg.C, 3 deg.C, 3.9 deg.C, 4 deg.C
- Prep cooler by display: 4 deg.C
- 2 door cooler: 2 deg.C
- Single door freezers: -6 deg.C and -5 deg.C (all items were frozen solid).
- Pest control provided by Abell - on site monthly. Last report reviewed with no concerns (May 25, 2021).
- Pest control has come in once after the last report to apply ant pesticide by barista bar.
