Observation: High temperature dishwasher struggling to maintain 71C for adequate sanitiation of dishes/utensils.
Correction: Contact a service technician to repair dishwasher immediately. Operator was informed that all dishes and utensils must be rewashed and sanitized.

Follow up inspection conducted to SCHO-BYC2UJ:
- High temperature dishwasher has been repaired, service technician was on site. The final rinse cycle was maintaining 71C at the plate level. Ensure all the dishes, utensils and equipment are rewashed in the dishwasher unit. Ensure dishwasher is checked daily to ensure that the final rinse cycle is maintaining at least 71C at the plate level.
NOTE: This is a dual dishwasher, can be high temperature or chemical.
