Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Observed knives being stored in the gap between a table & cooler. Severe build-up of grime noted. This is a repeat violation.)
Comments

- Knives are not stored in the gap between table & cooler
- Some improvement on cleaning noted; however, buildup of food debris and grease still noted in the frying area
- New lining for the shelf near the frying area has been purchased, but not yet put in place
- Some parts of the floor shows signs of wear and cracks & crevices. This is a concern as general cleaning of the premises cannot be done adequately. Black grime and food spills may support growth of pathogens and/or attraction of pests. The operator has requested for extension of floor replacement. The areas where there are cracks & crevices shall be replaced by January 2019.
