Observation: Rubber seal around potato peeler machine's chute has completely disintegrated and is falling apart. Gap between chute and main body of unit has biofilm build-up. Few small flies also observed coming out of unit
Corrective Action(s): Disconnect chute from main body of unit (if possible) and remove all remnants of the seal and any other debris/biofilm. Thoroughly clean and disinfect unit. Due: today.

Observation: Large around of dust and grease build up observed in the following areas: under and on covers for deep fryers, walk-in cooler and freezer doors, shelves in the grill/cooking area, under pallets in the back/dry storage area.
Corrective Action(s): Give the entire premise a thorough deep clean removing all dust, dirt and debris. Due: 1 week.
