corrective action: Sanitizer bag has been changed and measured at 200 ppm quats from dispenser. Sanitizer buckets refilled and measured at 200 ppm quats. Please ensure that the correct product is used and that sanitizer concentration is being verified with the test strips located on the premises. Re-wash and sanitize all surfaces. - Walk in cooler at 3.5C. All food stored off the floor, covered, and date-dotted. Fans clean.
- Upright glass cooler at 1.2C.
- All coolers equipped with accurate thermometer.
- Freezers at -18C or less.
- Temperature recorder up-to-date.
- High temperature dishwasher final rinse temperature at utensil surface at 71.7C (minimum 71C).
- Hand washing sinks (including staff washroom) supplied with hot and cold running water, liquid hand soap, and paper towels.
