Comments

Walk in cooler light functional Cap on quat sanitizer concentrate has been replaced, however concentration readings during inspection were between 50-100ppm. Staff checks indicate 200ppm, while EHO check with Subway strips also indicated 50-100ppm. Staff have been incorrectly checking. Supervisor on site shown how to check by EHO at time of inspection. Spoke with management - staff must be trained in standard checking procedure. Example: if foam of sanitizer is tested, readings become artificially high. Follow the directions on the strip container! A new probe thermometer has been acquired.
