Observation (CORRECTED DURING INSPECTION): Coconut stored outside of pest proof containers - CORRECTED DURING INSPECTION. Items transferred to pest proof container.
Tongs adjacent to liquid soap dispensing unit. This is not a suitable location as clean tongs can touch "dirty" area of liquid soap dispensing unit therefore contaminating tongs. CORRECTED DURING INSPECTION. Items moved to new location for storage.

Bottoms of milk crates on shelves are dirty. This area is a food equipment storage area. The shelves must be maintained in a sanitary condition and the bottoms of the storage bins must be cleaned and sanitized.

Corrective Action(s): Ensure staff are reminded that milk crates are used on the floor and must be completely washed and sanitized if they are to be used for food equipment storage.

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT - NEW SANITIZING DISPENSING UNIT INSTALLED AND FULLY OPERATIONAL - EXCELLENT!
- Three functional sink plugs available for use observed
- Ice machine and scoops in good sanitary condition
- Proper re-heating methods observed for previously cooked food items - proteins boiled in bags, sauces reheated in back
