* Cooking and handling of donairs/shawarmas must be performed by FoodSafe trained food handlers.
- Walk in cooler < 4°C
- Line coolers < 4°C
- Hot holding of beef/lamb in warmers > 60°C
- Recommended not filling the hot holding pans to > 1/2 full of chicken/beef/lamb
- Take internal temp of hot held food items after 1 hour of placing them in warmer

- General sanitation is satisfactory
