A follow-up inspection was conducted: The high-temperature dishwasher was repaired. 76C at the plate level achieved with min/max probe thermometer. Operator must check temperature daily - purchase a probe thermometer. Chlorine bleach for soaking cloths at 100 ppm. New cloths purchased. All cardboard on site is new. Cleaning has greatly improved. Cloth on door was cleaned. Ice water for rice spoon Thank-you.
