Observation: Observed food debris/dirt on shelving racks inside the walk in cooler. Grease build up and dirt on shelving racks in the main kitchen near dishwasher. This can lead to physical contamination of food itself.
- Ensure all shelving racks are cleaned and maintained. Maintain and follow cleaning schedule.

Observation: Observed cooler beside the prep cooler at 10C. Operator mentioned that technician has been called to fix the cooler. All coolers must be <4C to store perishable foods.

Observation: Observed bottom shelves installed less than 6" above floor in dry storage area, main kitchen and walk in cooler. All bottom shelves must be lifted at least 6" off the floor for proper cleaning of floors. Also observed holes on walls in dry storage area. Observed missing ceiling tiles. Also observed missing light cover above the prep area.
- Lift all bottom shelves at least 6" off the floor. Repair or replace all damaged wells as they are required to be smooth and easily cleaned. Install missing ceiling tiles and missing light covers above prep area.
