- both single door under counter coolers were all 4 C or colder - double door under counter cooler was 4 C - up right freezers were -18 C - up right coolers were 2 and 3 C - Display cooler was 4 C - Hand sinks had liquid soap, paper towel, hot and cold water - Sanitizer was 200 ppm quat, remember to change containers under espresso machines more frequently - Dishwasher had a final rinse of 180 F at gauge and 77 C at plate - General sanitation is satisfactory - only a few small flies noted around large garbage can, otherwise no evidence of pest activity.
