Observation: Walk-in cooler shelving units were lined with cardboard.
Corrective Action(s): Remove cardboard from shelving units. All surfaces must be smooth, non-absorbent, and easily cleanable. Cardboard will also affect air circulation in the walk-in cooler.

Comments

Facility has a main kitchen and three serving kitchens. Serving kitchens were not inspected due to the COVID-19 Pandemic.

-Walk-in cooler was at 4C.
-Walk-in freezer was at -14C.
-Temperatures checked and recorded at least once daily.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer dispenser and spray bottles were at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing good hand hygiene practices.
-Meat slicer was found to be clean and sanitary.. Slicer is disassembled for cleaning and sanitizing after each use.
-Equipment was found to be clean and well maintained.
-Ice machine was clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Canned food items were in good condition.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator. Pest infestation has improved significantly since the previous inspection.
-FOODSAFE Level 1 valid until March 14, 2023.
