Routine Inspection
- hand wash stations stocked with liquid soap and paper towels
- All cooler ambient air temperature below 4 degree Celsius
- All freezer ambient air temperature below -18 degree Celsius
- All hot holding temperature above 60 degree Celsius.
- 100 ppm Cl solution prepared during the inspection. Ensure 100 ppm Cl solution is prepared at the start of the business day for wiping cloths
- Dishwasher final rinse temperature above 72 degree Celsius at the dish surface. The detergent must be monitored and changed when empty.
Remider: Single use gloves must be thrown out after each use,
