Sandwich toppings in inserts (cut lettuce, tomatoes, pickles, and garlic butter) were not filled to the top, all toppings were probed with staff onsite and found to be at <4 deg C. Ice bath that the inserts are submersed in is a mixture of ice and water. Ensure to continue to do this.

Cleaning is improved underneath the cooking line, but continued cleaning is required behind the chest freezers in the dry storage. Remove the old broom/mop stick and other debris that have begun to accumulate a lot of dust. Any area where food is stored must be maintained in a sanitary manner.

Discussed with staff about re-heating of soups : they can only be reheated ONCE, and then whatever is not used must be discarded.
