Sink stoppers purchased. Good.
Pizza prep cooler continues to be a concern. Unit base at good temperature (0 to 2 C), but rail product temperatures in unit above 4 C when lids are open. Proteins measured at 6.5 C and cheese at 8.5 C. Move all proteins from rail to base and vise versa as temporary measure until unit looked at and serviced or rail temperature setting adjusted to allow food to maintain 4 C at all times.
