Observation (CORRECTED DURING INSPECTION): Prep table used to prepare ground beef into burger patties was not sanitized prior to use. Back kitchen did not have a sanitizing spray bottle or pail available for use.

Corrective action: Prep table was cleaned and sanitized before additonal food preparation is done. A second quats spray bottle was prepared at time of inspection. Proper sanitizing is essential for eliminating bacteria that can cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Employee preparing beef patties did not wash hands before putting on gloves. Gloves are not a substitute for proper handwashing.

Corrective action: The employee has washed his hands prior to handling more food. Employee was educated on importance and frequency of handwashing.

Observation (CORRECTED DURING INSPECTION): Tongs used for chicken were observed directly placed on dusty equipemtn.

Corrective action: Tongs were replaced and new tongs were placed on paper lining. Ensure that tongs are switched every 4 hours to prevent buildup of grease and bacteria.

Observation: Numerous (20+) flies observed in back dishpit.

Corrective action: Consult pest control company for fly management or install more sticky straps to reduce the number of flies in area. Ensure all foods are covered when not in use.

- High temp dishwasher achieves 72.7C at the plate (final rinse)
- Walk-in freezer at -18C or below
- All handwashing sinks equipped with liquid soap, hot / cold running water, and paper towels.
- Raw meats (e.g. hamburger patties) stored beneath read-to-eat foods.
- Employees observed checking temperature of patties (min 74C) using probe thermometer prior to serving.
