Observation: Mildew/biofilm was observed on the interior surfaces of the ice machine. Plastic jug used to scoop ice was stored inside of the ice machine--handle was in contact with ice.
Corrective Action(s): Ensure ice is discarded and all interior surfaces are properly cleaned and sanitized. Plastic jug was removed from the ice machine at time of inspection. Ensure plastic jugs/scoops are not stored in contact with ice to limit potential contamination of ice. An area should be designated for sanitary storage of ice jugs/scoops. Observation: Two "Home Depot" buckets were observed in chocolate preparation area. It was stated by staff that chocolate is placed into these buckets.
Corrective Action(s): These containers are not intended for storage of food. Ensure that appropriate food grade containers are used for food storage. Date to be corrected by: June 6, 2018.

Observation: No thermometers available for undercounter cooler units at front.
Corrective Action(s): Ensure that thermometers accurate to 1 degree C are available for all cold holding units to verify temperatures. Date to be corrected by: June 6, 2018.

- Freezers satisfactory
- No hot holding at time of inspection
- Food is stored safely at time of inspection
- Hand washing station is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach water sanitizer available in a spray bottle at 100 ppm chlorine. Note: Spray bottle was unlabeled; staff labeled spray bottle at time of inspection.
- High temperature dishwasher measured 76 degrees C at utensil surface during final rinse (minimum 71 degrees C at utensil surface)
- Discussed cleaning and sanitizing of in use equipment/utensils--satisfactory
- No signs of pest activity observed
Note: It is recommended to maintain logs for dishwasher as well as cooler/freezer temperatures.
