Comments

Monitor defrost cycles for condiments cooler to ensure that it is not defrosting during peak demand periods;
Make sure that all foods being placed in the condiments cooler have first been cooled to 4C in the walk-in cooler;
Make sure that foods are cooled in shallow pans and not placed into inserts until the food is 4C.

General sanitation satisfactory (three of the "T" bar ceiling struts above the laundry area need to be reattached to prevent a safety hazard and the broken valve in the toilet tank repaired), sanitizer readily available both in spray bottles and at dishwashing sinks, no indications of insect or rodent infestation.
NOTE:
Updated Environmental Health Bulletin re boil water advisories, small fires in food service establishments and food safety during a power failure provided to operator with a request to read, attach to current food safety plan, and review changes with all staff to ensure all staff are aware of the requirements of these documents.
