Met with Angela, Manager of the Menno Food Services, and we discussed the following:

- billing issue with FH invoices is still under the investigation
- pest control - any insects flying devices should be installed at least 2 m away from the food preparation area ( close to the entrance door or patio door )
- all food handler to wear the protective clothing ( apron )
- quat as approved sanitizer to be changed every 2 hours ( or as per manufacture recommendation )
- test strips are available so please use them and daily monitor the quat concentration
- cold holding units - very well organized, all food is labelled and dated, air temperature measured at 3C
- hot holding unit /operating at 150F

Suggestion:
- to install the splash guard around the dishwashing 2 compartment sink ( will protect the wall and it is easy to clean )
- self serving / customer's area - protect the single use utensils
