Observation: - Unused portions of canned tomato paste and crushed tomatoes stored in original can inside walk-in cooler.
Corrective Action(s): - Unused portions of canned acidic foods (e.g. tomato paste, tomato sauce, crushed tomatoes) must be stored in a clean and sanitized food grade container.

304 - Premises not free of pests [s. 26(a)]
Observation: - Rodent droppings observed in the following areas:
- Floor/ wall edges in front of walk-in cooler (under dough roller table and prep table).
- Under and behind upright freezers (along walk-in cooler).
- Under wire shelving unit beside prep cooler.
- Under end shelf in dry storage area and on boxes stored on end shelf (non kitchen items - miscellaneous items).
Corrective Action(s): - Remove droppings and thoroughly clean above noted areas.
- Use a bleach solution (1 tsp chlorine bleach + 1 L water) on affected areas.
- Remove all items on the end shelf from the premises - miscellaneous items not required for the food premises operation must not be stored in the food premises.
- Place snap traps and/ or glue boards in above noted areas.
- Follow-up with pest control technician regarding further actions that could be taken to address rodent activity in those areas.

Observation: - Wood-like materials, potentially from rodent gnawing and/ or nesting activity observed in dry storage area between wall and end shelf.
- Miscellaneous junk accumulation outside back kitchen door along building.
Corrective Action(s): - Remove materials and thoroughly clean up area.
- Remove end shelf and look for holes/ gaps/ cracks that could be rodent entry points. Seal any holes/ gaps/ cracks that are larger than 1 cm squared.
- Do not accumulate junk and/ or miscellaneous items directly outside premises to prevent potential rodent harbourage. Remove junk/ miscellaneous items.

- Middle: -10C (Food products are maintained in a frozen state).
- Left: Not in use at time of inspection. Employee states that operator plans to repair unit.
- Chest Freezer: -18C
- 100-200 ppm chlorine bleach sanitizing solution available.
- FOODSAFE Level 1 requirements are in compliance. Employee on shift has valid FOODSAFE Level 1 certificate.

**Overall sanitation of premises has improved since the last inspection; however, operator must continue to work on maintaining a higher level of sanitation throughout the premises, especially in hard to reach areas.**
