Observation (CORRECTED DURING INSPECTION): Food items stored in walk-in cooler had internal temperatures ranging from 6C - 9C.
Corrective Action(s): Walk-in cooler temperature setting was adjusted at time of inspection. Temperatures of food items decreased by end of inspection; ensure they reach 4C within 2 hours. Move as much of the meats and cheeses to working prep coolers in the meantime, and discard any items that do not reach 4C within 2 hours.

Observation (CORRECTED DURING INSPECTION): Hand sink in the back kitchen was missing paper towels.
Corrective Action(s): Ensure hand sinks are always supplied with paper towels and liquid soap for proper hand washing and drying.

Observation: Walk-in cooler had an ambient temperature of ~9C at time of inspection.
Corrective Action(s): Temperature setting was adjusted at time of inspection and staff began cleaning and removing dust from the compressor/vent. Ambient temperature decreased to ~6C by end of inspection.
*Monitor this cooler and ensure it is capable of maintaining temperatures at 4C or colder. Service this cooler professionally if necessary.

Comments

- Hand sink at front was supplied with liquid soap and paper towels
- Prep cooler inserts and undercounter portions were measured to be at or below 4C
- Upright freezer was measured to be below -18C
- 3-compartment sink available for manual warewashing; sanitizing compartment was filled with 100 ppm bleach solution
- Bleach sanitizer solution available in spray bottle at 100 ppm
- Food storage practices satisfactory; all food stored off the ground and covered
- General sanitation is good
- No signs of pest activity noted
**Temperature records not available on-site for review. Ensure to maintain daily temperature logs and have them available for review at all times.

**A follow-up inspection will occur on Friday, September 15th for the walk-in cooler.
