Observation (CORRECTED DURING INSPECTION): Quats sanitizer spray bottle in the kitchen was at 50ppm.
Corrective Action(s): Quats sanitizer must be at 200ppm to allow for proper sanitizing of food contact surfaces. Ensure staff follow proper mixing instructions on the label on the container. 200ppm sanitizer was prepared at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Bar handwash station did not have any single use paper towels. Dispenser was empty.
Corrective Action(s): Handwash stations must be easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Paper towels were replaced at the time of inspection.

Observation: Mould and food debris was found on the floors of the walk-in cooler.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times.

Observation: 1) Kitchen line handwash station hot water is not functioning. Staff are currently using the handwash station by the high temperature dishwasher for handwashing.
2) Door seals for the prep cooler are torn and need to be replaced.
Corrective Action(s): 1) Service handwash station and ensure it can provide hot and cold running water for proper handwashing.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -11C.
-Prep cooler was at 4C (top and bottom).
-Kitchen bar cooler (dipping sauce) was at 2C.
-Cut carrots and celery stored in an ice/water solution was at 4C.
-Upright freezer was at -15C.
-Hot holding was greater than 60C.
-High temperature dishwasher had a final rinse temperature of 79C on the dish surface (minimum 71C required for proper sanitizing).
-Bar glasswasher had a final rinse of 50ppm chlorine on the glass surface (minimum 50ppm required for proper sanitizing).
-Sink plugs present for 3-compartment sink.
-Bar Quats sanitizer spray bottle was tested at 200ppm.
-Ice machine clean and well maintained. Ice scoop stored in a sanitary manner in the bar ice well.
-General food storage practices satisfactory. One box of carrots delivered yesterday was stored on the floor of the walk-in cooler. Ensure all foods are stored off the floor to protect foods from potential contamination.
*Facility has a small problem with fruit flies in the bar and washroom towel storage area. Ensure areas are maintained in a clean and sanitary condition and towels are regularly laundered to prevent further fruit fly issues.
