General:
Handsinks X2 (kitchen): soap, paper towel, hot & cold running water available
-air dryers operational for public washrooms and staff washroom paper towel needs to be placed inside dispenser
-good handwashing procedures observed
Undercounter freezer: -12C
Undercounter cooler: 3C
Gravy X2: 72C
Hot holding units (patties, chicken strips etc.): 72 to 84C
Patties freezer: -10C
Walk-in freezer: -14C
Reach in coolers X2: <4C (36F and 38F on gauge; display thermometers present)
Creamers cooler: 4C
Condiments and sanitizers are recorded on tablets now (2/4 hour for condiments and 1 hour for sanitizers)
Dishwasher (high temp): 73.4C at plate and 88C at gauge, see thermolabel
Quats sanitizer in buckets and dispenser @200ppm, test strips within expiry date onsite
Temperature records also done on tablets now but corrective actions are handwritten on separate binder; recommend system upgrade to allow for CA entry
Probe thermometer in use, remember to sanitize probe between uses
Exhaust hoods last serviced in Sept, 2019
Discussed to change deep fryer oil more frequently due to heavy smoke
