Observation (CORRECTED DURING INSPECTION): Cardboard observed in walk in cooler and on counter used as cover / food set on top. do not use cardboard as food contact surface as it cannot be cleaned and may contaminate food items.

Chlorine sanitizer available in buckets with wiping rags and 3-compartment sink at 200 ppm
All cold holding units 4 C or colder
Freezers were - 18 C or colder (except walk in freezer measured - 6 C, continue to monitor but was - 18 C earlier in the day).
Pest control in place (Orken) no pest activity at time of inspection
Hot holding was 60 C or hotter
Ice machine in sanitary condition, scoop stored separately.
