Observation (CORRECTED DURING INSPECTION): 4 varieties of pizza on display at room temperature that were not time tracked on computer system to verify maximum 2 hour shelf life.
Corrective Action(s): Product discarded.
Each pizza displayed at room temperature must be monitored on computer system for maximum 2 hour display at room temperature.

Observation (CORRECTED DURING INSPECTION): Wiping rags stored in sanitizer container, 0 ppm chlorine.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).
Sanitizer solution is to be remade when upon premise opening and throughout the day to maintain 100 ppm chlorine.

Observation: Trace mouse droppings under pop racks below electrical panel.

Flour and debris build-up along wall under dishwashing sinks and on baseboards / pipes along wall leading to staff storage area.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

Observation: Repeat violation: 1 compartment sink faucet has broken off.

Soap dispenser at 3 compartment sink is broken.

2 large blue plastic bins - large of amout of plastic is cracked and broken off.
Corrective Action(s): Replace 1 compartment sink faucet.

Repair / replace 3 compartment sink soap dispenser.

Discard and replace 2 damaged plastic blue bins.
