Observation (CORRECTED DURING INSPECTION): Hamburger patties were between 51C to 55C in the hot holding unit.
Corrective Action(s): Ensure hot foods are maintained at/or above 60C to prevent the growth of pathogens and/or the formation of toxins. Patties were discarded at the time of inspection. Hot holding unit insert cover was inverted, resulting in loss of hot holding capacity. Insert cover was returned to the proper position at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Cook area counter top cooler, under counter cooler, and condiment cooler were at 4C.
-Front service area prep cooler and under counter cooler were both at 2C.
-Dairy/soft serve coolers was at 4C.
-Cake freezers (3 units) ranged between -18C to -24C.
-Driver thru upright freezer was at -18C.
-Downstairs chest freezers ranged from -16C to -22C.
-Customer area freezers were at -23C/24C.
-Chicken was fried to greater than 74C and beef burgers were cooked to greater than 71C.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer dispenser was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails are changed every 2 hours and were labelled and tested at 200ppm.
-Ice machine was found to be clean and sanitary. Ice machine changed monthly and scoop stored in a sanitary manner.
-Tongs and utensils stored on ice.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation satisfactory at the time of inspection.
-Facility serviced by professional pest control operator. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 equivalence valid until February 05, 2028.
