Observation: Floor wall connections, baseboards, and wood cabinetry deteriorating and becoming more and more difficult to keep clean. Despite obvious effort of staff to clean difficult areas the general deterioration of the premises is making it increasingly difficult. Mouldy silicone seals around sinks, floor and baseboards evident.
Corrective Action(s): Monitor ability to keep facility clean and food protected from contamination. Recommend developing a renovation plan for future tenant improvements.

Cooling units less than 4 C.
Walk-in Freezer at -14 to -16 C
Hot holding above 60 C.
**Watch bottom left warmer tray on unit below counter. Some of the egg product noted below 60 C. All other trays well above 60 C.
Sanitizer in sani-buckets all between 200 and 400 ppm.
Handwash stations stocked and good.

Space is at critical mass at this location. Manager and staff doing their best to clean and organize, but it is an issue. Dishwashing, in particular effective air drying is lacking at this location. Additional drying rack dedicated to drying food containers (inserts/pots etc.) and utensils is needed. As discussed the use of a trolley may help, but floor space is limited. Review at next inspection.

Reviewed areas of the premises that have been an ongoing concern with cleaning and general maintenance. Much better today. Good work.
