Observation: Premises has removed a wall leading to the kitchen and installed a new walk in cooler without receiving health approval or submitting any floor plans.
Corrective Action(s): Submit an updated floor plan that shows the current layout of your facility (can be hand drawn). The floor plan should be drawn to scale and have all the rooms and equipment properly labelled. Business card provided to operator, floor plan can be e-mailed.

Observation: 1) Cobwebs observed in between proofer and the ovens, behind the ovens, behind the dough table area
2) Old debris/flour caked onto dry storage plastic containers
3) Dirty mini drawers for old decorations was stored right beside the prep area.
Corrective Action(s): Clean all above mentioned areas and remove the mini drawers.

Handsink in front area has liquid soap, paper towels, hot/cold running water
There are 3 coolers in the front sale area: 2 showcase coolers and 1 upright two door cooler. All 3 of these coolers were at 4 deg C or less
Upright cooler in kitchen by the 3 compartment sink: 2.9 deg C
Walk in cooler (newly installed without prior health approval): 2.2 deg C.
All freezers are at -18 deg C or less
Back door has screen in place to prevent pest entry
Main chef has FoodSafe certificate, expiry in 2021
3 compartment sink with bleach available to sanitize
Bleach spray sanitizer in front area and in back area is at 100 ppm chlorine residual
