Observation: -Accumulation of food debris (flour, dough) noted on floor throughout back prep
-Food debris/dirt noted on walk-in cooler floor
Corrective Action(s): -Thoroughly clean entire back floor to remove all food debris. Pay particular attention to areas behind equipment.
-Remove buckets from walk-in cooler floor and thoroughly clean entire floor.
Level of sanitation has been a repeat issue. The detail and frequency of cleaning needed must be updated in sanitation plan to prevent issues from re-occuring

-Hot and cold water present
-Handsinks supplied with liquid soap and paper towel
-Freezers were functioning
-Walk-in cooler was at 3C
-Display cooler (where perishable baked goods stored) was 2C. (Adjacent display cooler was at 8C however this unit is not used for potentially hazardous foods).
-Bleach present for sanitizing dishes and food contact surfaces
-No signs of pest activity noted at the time of the inspection. Screen door present on back door.
