Routine inspection conducted today:
Handwash station accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Hot hold units for soup and rice were held above 60.0C.
An in-use ice cream scoop - used for rice, was noted stored in water during the inspection. As per staff, water is changed out at least every 2 hours. This is a good practice but the best practice is to store any in-use utensils in either an ice water bath or left dry and take the utensils for cleaning and sanitizing every 2 hours. Staff discarded the water and stored the utensil in ice during the inspection.
Appropriate dispensers noted in-use for bulk food containers - dispensers stored in a manner where the handle does not come into contact with food - excellent.
Food contact items and equipment noted sanitary and in good condition.
Wall mounted QUAT sanitizer noted with 400 PPM QUAT.
Sanitizer container for in-use wiping cloths was noted with 200 PPM chlorine residual.
Going forward, please choose either QUAT or bleach and just use the one type as sanitizer for the facility. If the two chemical accidentally mix together, toxic fume may be produced and become hazardous to health.
High temperature dish machine was able to reach 74.9C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
Excellent sanitary condition and organization noted.
