Observation (CORRECTED DURING INSPECTION): Quaternary ammonium sanitizer in pails measured with a concentration in between 50-100 ppm. 200 ppm is required to properly sanitize food contact surfaces and eliminate pathogens.
Corrective Action(s): Discard and refill the pail with 200 ppm quats sanitizer. Clean and sanitize the all food contact surfaces again. When filling up food surfaces sanitizer, let the dispenser run for a few second before filling up.

- Stand-up freezer maintained at -18C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium sanitizer measured from the dispenser.
- High temperature dishwasher registered 77C at plate level.
- Ice machine and ice well maintained in sanitary condition.
- Storage practices satisfactory.
- Temperature records maintained and available for review.
- No pest activities observed at the time.
