Observation:
The exhaust canopy cleaning sticker indicates it should of been done in September 2017. Grease will accumulate inside the exhaust flue which is a fire hazard and attract pests.
Corrective Action(s):
Contact a professional company to clean the exhaust canopy.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -20C; hot holding units 60C; and thermometers present. Train staff to use stainless steel inserts in the hot holding unit storing the rice and baked beans. As well, all inserts shall be covered with a lid.
- High temperature dishwasher had rinse cycle temperature of 71C at the plate's surface as per max/min thermometer.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; labeled; date coded; in groups with raw proteins separate from RTE foods; and 6" off the floor on shelves.
- No expired food in use or for sale. FIFO rules being followed.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good.
- No signs of pests.
- Foil lining equipment is changed daily.
