Observation: Some areas including shelving in marginal condition and/or not appropriate in food prep areas. They are either in poor condition or not of a suitable material.
Corrective Action(s): The following needs to be done to promote improved sanitation in premises:
- Walk-in cooler: Remove corrigated plastic from shelves; Remove other plastic topping from right side of cooler (left side OK); Remove rusted and wooden shelves from cooler;
**Make sure remaining shelving is thoroughly cleaned.
- Shelving above work stations on right side of kitchen and above prep sinks should be replaced.
- Wood storage shelves in back storage area just need to be painted (top and bottom). The two shelves that are flaking wood badly should be replaced as discussed. Generally in good shape and metal structure solid.
- Wood shelving in washroom chemical storage needs to be painted and kept clean as discussed.
- Eliminate the use of cardboard to cover work surfaces, even the chopping block. Permanent surfaces must be accessible and cleaned regularly.
Above should be addressed prior to next scheduled inspection.

Comments

Walk-in cooler temperature noted at 5 to 6 C. Discussed with operator that it cycles "on" at around 50 F on gauge. Checked again and unit was at 1.5 C. OK.
Other cooling units less than 4 C. OK.
Hot holding unit above 60 C.
Dishwasher at 74 C at plate OK.
Glasswasher at 50 ppm Chlorine - OK.
handwash stations ok

Old bin freezer in the back still there. needs to be replaced.
