- Renovations to chicken rotisserie area are complete. Rotisserie chicken cooking and packaging area was expanded; a separate raw prep room for rotisserie chicken prep and chicken wing seasoning was added. Renovations appear to be completed as per approved floorplans. Premises may begin food processing in newly renovated areas.
- Chicken Prep Room Ambient Temperature: 9 deg C
- Traulsen Blast Chiller: 4 deg C
- Hot Holding Display Unit (Rotisserie Chickens): >65 deg C
- Deli now uses recently implemented "coloured robe" system - staff handling raw chickens in chicken prep room MUST wear blue robes and aprons and must change robes and aprons before entering deli area (white robe area). Robes are laundered off-site by Canadian Linen.

- Handsinks (deli prep room, chicken prep room, cooking room) supplied with liquid soap, papertowels, hot and cold water.
- Walk-In Cooler (shared with meat dept): <1 deg C
- Deli Prep Room Ambient Temperature: 9 deg C
- Deli Section Coolers (retail area): <4 deg C
- Temperature monitoring records appear maintained and up-to-date. Temperature checks are taken every 2 hours daily between 9 am and 9 pm.
- Food storage practices appears satisfactory. Storage is organized, food is protected from contamination.
- Wiping cloths stored in 200 ppm Quats sanitizer.
- Proper manual warewashing procedures observed. 200 ppm Quats sanitizer used for sanitizing food equipment.
- General sanitation of premises appears satisfactory.
- Monthly pest control services provided by Orkin. Follow all recommendations provided by your pest control company.
