402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: Staff member observed handling food (baked potato) with gloves, relocating a garbage can, followed by handing food again without changing glove.
Corrective Action(s): Staff must observe proper hand hygiene when handling food. Hands must be washed before handling food and whenever hands become potentially contaminated. If staff are using gloves, staff must change gloves whenever gloves become potentially contaminated. Baked potato was discarded at the time of inspection and staff changed glove.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Hallmark poultry blue bins are used for the storage of dry foods.
2) Raw poultry was found stored above ready-to-eat food items.
3) Tomato sauce was found stored in an opened can.
4) Foods were found double stacked without proper covers between the containers.
5) Scoops were found stored inside dry ingredient containers.
Corrective Action(s): 1) Container which were used to store raw meats cannot be reused for the storage of dry food items. Transfer food items into sanitized food grade containers.
Correction date: Today
2) Raw meats are to be stored below and separately from ready-to-eat foods to prevent potential contamination of foods. Poultry was relocated at the time of inspection.
3) Once canned items are opened, food must be transferred to food grade containers with proper covers. Tomato sauce was transferred at the time of inspection.
4) Foods which are double stacked must be separated a food grade material (plastic wrap, tin foil, food grade lids, etc). Items were relocated at the time of inspection.
5) Discontinue the practice of storing scoops inside dry ingredients - handle or base of container may contaminate the ingredients. Scoops were relocated at the time of inspection.

Observation: Built up food debris was found in the prep cooler and mould was found on the underside of the shelving units in the walk-in cooler and on food containers.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times.

Observation: 1) Prep cooler door seals need to be replaced.
2) Cardboard was found lining the shelving unit in the walk-in cooler.
Corrective Action(s): 1) Replace door seals and ensure they are maintained in good working order to prevent the loss of cold refrigeration air and to prevent the accumulation of food debris.

2) All surfaces must be smooth, non-absorbent, and easily cleanable. Cardboard must be removed from the shelving unit. If shelving unit must be lined, an acceptable material is plastic or metal.

Observation: Front cooler unit was at 11C - technician has been called. Cold potentially hazardous food made this morning was found stored in the cooler.
Corrective Action(s): Service cooler unit to ensure it can maintain 4C or less at all times to prevent the growth of pathogens and or the formation of toxins. Potentially hazardous food item was relocated to the walk-in cooler.

Observation: Container of bleach and spray bottle of windex were unlabelled.
Corrective Action(s): Ensure all chemical containers are properly labelled to prevent accidental misuse and or mixing of chemicals. Once labels begin to fade, ensure containers are relabelled. On the bleach container also label the amount of bleach required per pail of water.

Comments

-Walk-in cooler was at 4C; Walk-in freezer was at -16C.
-Prep cooler was at 3C (top) and 4C (bottom).
-3-compartment sink used for cleaning and sanitizing. Sink was prepared with 200ppm chlorine sanitizing solution.
-Chlorine sanitizer pail was tested greater than 400ppm (test strip began to bleach out). To mix 200ppm chlorine sanitizing solution, add 1 teaspoon of bleach per liter of water.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Sweets in the front display area properly protected from customer contamination.
-Food items properly stored off the floor.
-General sanitation of cook line good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FoodSafe Level 1 certificates issued prior to July 29, 2013 expire on July 29, 2018.
