Observation: Rodent droppings were observed in the kitchen. Facility is currently serviced by a professional pest control operator and staff and sanitizing all food contact surfaces on a daily basis.
Corrective Action(s): Continue to monitor for pest activity on a daily basis and sanitize food contact surfaces each morning. Contact pest control operator if pest problems worsen or do not improve.
To prevent further infestation ensure the following area carried out: determine where pests are entering the facility and seal potential entry points, store foods in pest resistant containers, removed organic waste from the facility on a daily basis, and remove any standing water in the kitchen.

Comments

-Walk-in cooler was at 4C.
-Cafeteria area upright cooler was at 4C.
-Chest freezers ranged from -18C to -22C.
-Hot holding was greater than 60C.
-Chicken was cooked to greater than 74C.
-Probe thermometers used to verify temperatures.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Good hand hygiene practices observed by staff at the time of inspection.
-Quats sanitizer pails labelled and tested at 200ppm.
-Equipment was found to be clean and sanitary.
-Ice machine was clean and well maintained.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until April 20, 2026.
