- General sanitation of food court area was satisfactory - Handsinks supplied with hot and cold running water, liquid soap and paper towel - Coolers were operational and maintaining food at acceptable temperatures: - Walk-in cooler 2C - Prep cooler 4C - 2 door undercounter cooler (front) 3C - Wiener cooler 2C - Product in soft serve machine was 4C. Machine is cleaned and sanitized twice weekly. Sterasheen used. - Hot holding of potentially hazardous foods at acceptable temperature (60C or above) - Pizza 69-71C - Chicken strips 65C - Gravy 62C - Wieners 73C - Quats sanitizer present in warewashing sink. Concentration of solution was 200ppm. Observed proper manual warewashing procedures (wash, rinse, sanitize, air dry) - No signs of pest activity noted. *Grate missing from ceiling adjacent to entrance to walk-in cooler. Supervisor reported a replacement is being ordered.
