Coolers measured less than 4C Freezers measured less than -18C Hot holding (gravy) measured above 60C Hand sinks are supplied with soap and paper towels. 200 ppm quats sanitizer measured at sink dispenser and in sanitizer buckets. Dishwasher final rinse measured above 71C at dish surface.
