- All freezers at or below -19'C
- Hot-holding units at or below 4'C
- Room temperature holding of cut vegetables confirmed maximum 2 hours by staff
- Room temperature holding of sauce condiments confirmed maximum 3 hours by staff
- All food stored covered and at least 6 inches off the floor
- First-in-first-out method observed in use
- Thermometers available in cold-holding units
- Temperature logs are maintained on site
- General sanitation is good during inspection
- All hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 75'C at plate surface (above minimum required final rinse temperature of 71'C)
- 2-compartment sink available with drain plugs and bleach
- QUATs sanitizer in pails with wiping cloths (X3) measured at 200 ppm QUATs concentration with test strip
- QUATs test strips available on site
- All equipment observed stored in a sanitary manner
