Observation (CORRECTED DURING INSPECTION): Found bowl of cooked meats and large tray of sushi rice in dishwashing area.
-Staff moved foods to food prep area.
-The dishwashing area is not a sanitary place to store foods. Do not store foods here.

Follow-up inspection conducted.

Following items have been corrected:
-Old microwave was removed and a new microwave installed. Interior of microwave is clean.
-Low-temperature dishwasher is now dispensing chlorine and adequately sanitizing dishes. Measured 50ppm at plate surface. *NOTE: Please check that dishwasher is working before use by using chemical test strips.
-Food organization has improved.
-Fan in walk-in cooler was cleaned.

-Signature not obtained due to COVID protocols. Report printed and reviewed with staff.
