Deep clean completed and operator was able to wash under grease trap which has drastically reduced fruit flies. Fans are also added near grease trap to ensure the area is dry. Empty potato sacks are used to line garbage bags but are taken out nightly. Recommend covering container storing recycled bottles and cans with a tight fitting lid, or something to the effect to prevent harbourage around that area. Continue to maintain with this level of sanitation.
