Observation: 1. Mildew observed on the water tray inside the ice machine. Operator stated it was cleaned 3 months ago.
2. Food debris observed on the blade of vegetable cutter.
Corrective Action(s): 1. Clean and sanitize the interior of the ice machine. Discard the current batch of ice and first batch after sanitizing. Ensure ice machine is cleaned and sanitized at least every 2-3 weeks.
2. Clean and sanitize the vegetable cutter. Ensure all equipment is cleaned and sanitized after each use. Correct by: immediately.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher achieved 66-67C rinse temperature. At least 71C is required to properly sanitizing utensils and food contact surfaces.
Corrective Action(s): Set up manual dishwashing at the 2 compartment sink. You may use the dishwasher for wash and rinse, but sanitizing must be performed manually.

Observation (CORRECTED DURING INSPECTION): Bar area hand washing station was obstructed with a water jug in the basin.
Corrective Action(s): Do not leave any items in the basin of the hand washing station. Remove the water jug immediately.

Observation (CORRECTED DURING INSPECTION): Trays of raw fishes were stacked on top of each other in the walk-in cooler. The bottom of the tray was in contact with raw fishes.
Corrective Action(s): Do not stack containers of food without a cover. The bottom of the tray may contaminate the food. Cover the containers or store each container separately.
