Observation (CORRECTED DURING INSPECTION): Repeat violation: the glasswasher had 0 ppm chlorine when tested. Glasswasher records were being kept daily with a check mark, however they did not indicate the actual concentration.
Corrective Action(s): The sanitizer bottle in the glasswasher was almost empty and was replaced during the inspection. It reached 100 ppm after the bottle was replaced. Ensure that glasswasher records are kept daily and that the actual concentration is recorded. Ensure that the remainder of the old sanitizer solution is not mixed with the new solution when it is replaced. This will only dilute the new solution.

Observation: The setup downstairs has changed and a small sink was added. Note that food preparation has not been approved for the downstairs area and will not approved since there is no dishwashing area there.
Corrective Action(s): Submit updated floor plans for the downstairs area. This was noted in the February 22, 2017 report as well.

Comments

-Ensure that the dishwasher logs are recording the final rinse temperature, not the wash temperature.

All coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests.
Ice machine was clean.
Dishwasher final rinse temperature reached 74 C at the plate level.
General sanitation was satisfactory.

-A follow up inspection will take place within the next two months to check for compliance.
