- sanitizer measured 200 ppm chlorine in several buckets; wiping cloths stored within
- dishwasher reached 71C at the final rinse cycle - temperature gauge appears to be broken on machine; obtain a waterproof thermometer to check rinse temperatures
- meat slicer sanitary
- foods being rapidly cooled in hallway with fan
- staff have taken FOODSAFE refresher course
- reminder that foods brought out of coolers must be kept at 4C or colder, or used up within 2 hours
