Routine Inspection:

Front Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All under-counter coolers and display cooler maintained at or below 4 degrees Celsius.
- QUAT sanitizer in all buckets = 200ppm. Wiping rags stored in sanitizer solution - very good.

Back Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- High temperature dishwasher sanitizing with 72.8 degrees Celsius at dish level after final rinse cycle.
- Concentration of QUATs sanitizer at dispenser = >200 ppm.
- 2-door cooler = 2.8 degrees Celsius.
- 2-door freezer = -18.4 degrees Celsius.
- Dry storage area well organized.
- Ice machine maintained in sanitary condition. Ice scoop stored in designated container.

Overall:
- Thermometers present in all cold holding units.
- All food items stored at least 15 cm (6 inches off the floor).
- Foods covered and protected from contamination.
- Overall cleanliness and maintenance very good.
- No signs of any pest activity at the time of inspection.
- Premises well lit.
- Permit to Operate posted.
