Observation (CORRECTED DURING INSPECTION): 1) No food-contact surface sanitizer readily available for use at time of inspection.
2) Vegetable peelers/slicers kept in prep table were soiled with old food debris.
Corrective Action(s): 1) Operator prepared fresh bleach solution at time of inspection. 200 ppm detected. Ensure sanitizer solution is always available for use during hours of operation. A spray bottle of sanitizer was also prepared at time of inspection.
2) Peelers were washed and sanitized at time of inspection. Ensure all clean equipment/utensils are kept in clean areas protected from contamination.

Comments

- All hand washing sinks were supplied with hot and cold running water, liquid soap and paper towels. Good.
- High-temperature dishwasher reached above 71C at dish surface during rinse cycle - good.
- All coolers were maintaining temperatures of 4C or colder
- All freezers were maintaining temperatures of -18C or colder
- Rice hot held at above 60C at time of inspection
- Small bucket of bean sprouts stored in cold water. Ensure to use up or discard within 2 hours.
- Ice machine not in use - OK
- Dry storage areas satisfactory
- Reminder that thawing must be done in the cooler overnight or under cold, running water.
- Reminder that potentially hazardous food must not be left out at room temperature for more than 2 hours (such as pre-fried items and raw meats). Ensure to properly cool hot foods from 60C to 20C within 2 hours, then from 20C to 4C within the next 4 hours.
- Reminder that in-use utensils (such as rice scoops) must be held in ICE WATER and changed/washed/sanitized every 2 hours.
