No large pots of sauces were observed being cooled at room temperature, discussed proper cooling requirements again with kitchen staff (as mentioned on previous inspection report)
All foods in walk in cooler are now covered with lids or with plastic food grade wrap
Foods in walk in cooler are now being stored on the metal grates and off the floor (Try to keep as many foods off the floor as possible as this is important to facilitate sanitation/cleaning)
General organization and sanitation of the walk in cooler has improved, try and maintain this level of organization with your walk in cooler as it should not be kept in a dirty/messy manner
No take out containers observed in mop sink area anymore
