Observation (CORRECTED DURING INSPECTION): Back paper towel dispenser and soap dispenser are broken. Roll of paper towels being place on food table and temporary soap pumps being used.

Corrective Action(s): To prevent bacterial growth, rice scoops are to be stored in a container of ice as opposed to warm stagnant warm.

Observation: Heavy black grease and old food debris accumulated under the front grill.
General grease build-up on walls and floor around the mop sink area.
Accumulation of old food debris noted under standup freezer in the back kitchen.
Corrective Action(s): Facility needs to be cleaned. More frequent and thorough cleaning is needed underneath the front grill unit.

Comments

Routine inspection conducted and the following were noted:
Walk-in cooler at 4C.
Cold prep table by the front cooking station was less than 4C. Foods stored in the inserts were at 4C and not food items were stored in the lower compartment.
Hot holding of soup and rice at least 60C.
High temperature dishwasher achieved a final rinse temperature of at least 72C at plate level for 2 consecutive cycles.
100ppm of chlorine sanitizer available in the back kitchen.
Chest freezers in the excess back storage area were at -18C.
Food items stored at least 6 inches off the ground and properly covered.
