Operator informed that the meat cutting area is used 2 times a week.

Temperatures:
Coolers and freezers are shared with the food store side of the facility.
Raw meats in the walk-in cooler were held at 4 degrees Celsius or below.

NOTE: maintain a temperature log to document cooler temperatures regularly.

Sanitation:
Knives and cutting boards are in good sanitary condition.
Meat slicer is in good sanitary condition.
200 ppm chlorine residual solution is available in a spray bottle.
Hand washing sink is equipped with hot and cold running water, liquid soap, and disposable paper towels.
2-compartment sink is equipped with plugs.

Food is stored off the floor.
No pest activity noted in the meat processing area.
