Comments

General:

- all handsinks equipped with hot and cold running water, soap and paper towels.
- Chemical dishwasher is used with 40 ppm chlorine.
- mixer is washed and sanitized in the dishwasher.
- Take out containers are sanitary and covered.
- hot-holding (lentil soup) = 65 degrees C
- Display cooler: 4 degrees C
- drink cooler: 2 degrees C
- Walk in cooler: 3 degrees C (samosas)
- 2 door freezer: - 10 degrees C (veggie pakora) - in frozen state.
- chest freezer: -14 degrees C ( in frozen state)
- chest freezer: -22 degrees C
- sliding cooler: 4 degrees C
- Boiled potatoes left at room temperature and measured 48 degrees C. Potatoes were being prepared for samosas.
- NOTE: Boiled potatoes are cooled, peeled off, mixed with spices, put in dough and put in a cooled to be deep fried the next day.
- Lentil balls in water noted in a sliding cooler and measured 13 degrees C.
- NOTE: It was being cooled in a cooler. Lentil balls were fried at 9:30 am, put in water and cooled to be used for "Dhai Bhalla Plate" (The inspection took place at 11:15 am).
- Dough mix mixed with water left at room temperature and measured 24 degrees C. It was being used up at the time of inspection.
- NOTE: It was used to make the dough for "Ghevar". Ghevar dough is cooked and toppping will be pit on top (pistacio, almonds, dry milk powder and white flour).
- Ventilation services are regularly provided (next service date: October, 2023).
- Grease trap is regularly checked (next service date: August, 2023).
- hot-holding (samosas): 64 degrees C
- Tongs used for samosas are kept at 60 degrees C or above.
- All other sweets displayed in the front of house are shelf-stable.
